I wrote this blog for Alpha Dessert Juice Cafe, one of the many clients of Alpha Marketing. It was designed to incorporate the keyword kulfi into the website and increase on-page SEO for that keyword.

What is Kulfi?

Kulfi isn’t a common term here in America, but it should be! This creamy dessert comes from South Asia and is commonly referred to as “Indian ice cream.” Unlike American custard-based ice creams, kulfi is created by slowly simmering sweetened, flavored milk and constant stirring. It cooks until the volume of milk is reduced by half and greatly thickened. The slow cooking process caramelizes the milk and sugar, giving a distinct flavor that cannot be compared to anything else.

The kulfi is then poured into molds and slowly frozen. This helps the kulfi create a smooth, velvety texture that is hard to beat. Because kulfi is made with such a dense texture, it doesn’t melt nearly as quickly as traditional custard-based American ice cream. It is often served on a stick (like a popsicle) for easy eating. History of Kulfi

The history of Kulfi can be a bit muddled, but it is believed to have originated in the 16th century in northern India (at that time the Mughal Empire) by members of the royal family. The traditional Mughal desserts of that time already contained condensed milk in a mixture. The Mughals then decided to add flavors like pistachio and saffron, pour it into metal/earthenware cones, and then freeze it using a mixture of ice and salt. This freezing method allowed the dessert to stay frozen longer and be shipped to warmer parts of the Mughal Empire. The word “kulfi” is based on the Persian word for a covered cup, which is similar to what it was shipped in. Thus began the smooth, creamy dessert known as Kulfi.

Kulfi can be found at many street vendors in India. These vendors are called kulfiwalla’s. They keep the kulfi frozen by keeping the molds submerged in salt and ice mixtures in their kulfi carts (just like it was transported at its creation!). This treat has grown in popularity over the years and is well-loved by citizens of India, Pakistan, Bangladesh, Sri Lanka, Burma, Nepal, and the Middle East.
